Happy hump day! (I can’t help but snicker when I hear this…which is why I type it every week)
I have a fun selection of eats for you today….and something truly horrifying.
Breakfast: a strawberry banana smoothie with 1 cup frozen strawberries, 1 frozen banana, 1 scoop vanilla fitmixer powder, 3/4 cup almond milk, and a pinch xanthan gum. I always crave smoothies (I’m a huge Jamba Juice fan), but when I wake up to a cold apartment I never want to make them. Today I finally did!
I also had an attempted homemade chai tea latte with almond milk – just look at that froth! It was way too watery though…maybe next time I’ll steep the chai tea in less water or milk instead. Any ideas?
Snack: I started to get hungry before my workout, so I ate half a grapefruit and an iced oatmeal cookie Clif Z Bar.
Lunch/Snack: For lunch after the gym (before my shift), I packed my bento with bean dip, carrots, celery, grapes, and a hummus and veggie wrap. On the drive home, I ate a kiwi that I didn’t eat at lunch….no picture because I’m a responsible snacker ![]()
Dinner: Dinner was awesome! I had some thawed pulled pork (from those Superbowl flautas) and two (!) kinds of kale chips. I made savory garlic chips using this recipe, and then a sweet version I came up with on my own, which was suprisingly amazing!

Cinnamon Sugar Kale Chips:
1/4-1/3 bunch kale (I think? I just filled up a cookie sheet)
1 teaspoon Coconut Oil
3/4 teaspoon cinnamon sugar
Bake at 375 for 10-12 minutes, until the leaves brown
The sweet chips sound crazy, but I promise you they were delicious. Like cinnamon pita chips with a hint of coconut (I like coconut oil because it adds just enough flavor without being overwhelming).
Dessert:
Today I was really feeling another snack, so I had mini peanut butter and honey sandwich and some more homemade froyo with kiwi.
And then….somehow the rest of the froyo disappeared from the container.
I regret nothing.
I made the froyo using this recipe – I used whole greek yogurt for the first try (I mistakenly bought it), but I want to try out a non-fat version next. It was fantastic. I used this recipe, but I think next time I’ll use even less sugar since I love tart froyo and this was a bit more vanilla. It gets a bit hard in the freezer, but if you leave it out to thaw it does just fine. At least it’s a small recipe (I don’t know how she got 1 quart, it only uses 3 cups so expect about 3)….and since I used Greek, it’s full of protein ![]()
Lastly, something horrifying:
Ophelia has figured out how to get on top of the bedroom shelf. Lord help us all, and save my electronics.
Favorite flavor of ice cream?
SO HARD. I love Chocolate Peanut Butter and Grandma’s Cake Batter, both from Tillamook, but really the only flavor I hate is Green Tea.
What’s your favorite Starbucks/Dutch Bros/fancy coffee drink?
Starbucks: Apple Chai or a Mocha Lite frap with a banana blended in
Dutch Bros: Pumpkin Pie or Gingerbread Latte
